Eriodictyol is a bitter-masking flavanone, a flavonoid extracted from Yerba Santa (Eriodictyon californicum). Eriodictyol is one of the 4 flavanones identified in this plant as having taste-modifying properties, the other three being: homoeriodictyol, its sodium salt and sterubin.
